Southern Cornbread
This cornbread was from Holly Clegg’s Trim & Terrific Gulf Coast Favorites cookbook. Delicious? Yep. Moist? OMG, yes. But I couldn’t in good conscious post the recipe after going back and reading the ingredients from the required corn muffin mix (I assumed it was probably cornmeal. Nope.). Definitely “terrific”, but I’m not going to get “trim” eating these processed cornbread food bombs, lol.
In case you’re curious, here are the ingredients listed in the “corn muffin mix”: Wheat Flour, Degerminated Yellow Corn Meal, Sugar, Vegetable Shortening (Palm Oil, Soybean Oil), Contains Less than 2% of Each of the Following: Baking Soda, Sodium Acid Pyrophosphate, Monocalcium Phosphate, Salt, Wheat Starch, Niacin, Dextrose, Tricalcium Phosphate, Reduced Iron, Corn Starch, Thiamine Mononitrate, Riboflavin, Natural Flavor, Folic Acid, Silicon Dioxide.
