I was feeling tired and lazy tonight so I whipped up this simple blackened sea scallops dish for dinner. Just sea scallops touched on the top and bottom with paprika, cayenne pepper and black pepper, then stir-fried with a couple of tablespoons of olive oil. Served on a bed of mixed greens and alfalfa sprouts. I drizzled a little balsamic vinaigrette on top to add a little tang to the pepper heat. Tasty, nutritious, and it only took 15 minutes to make.

    Tx for the feedback. Yeah, I am new at this but I am already struggling with unnecessary carbs. I mean, It’s already 7:30 pm at night…how much energy do I really need between now and when I go to sleep? I’ve been reading about Dr. Mary Vernon’s take on things and now I am more confused than ever. Just thought I would keep it simple tonight and see how I feel in the morning. Live and learn, I guess. What is your diet experience? I was just recently diagnosed and haven’t seen a nutritionist yet. I’m just muddling through at this point.

    Hi there…my husband is diabetic and loves seafood. Sounds mighty delicious and especially worth it since he has to be very careful with the carbs. We’ve cut back on a lot of things, and he’s doing quite well. He eats more veggies and fruits than breads and starches and he exercises regularly; which makes his doc happy and helps to manage the diabetes.
